Roasted Cauliflower with Cumin

Warm roasted cauliflower is the perfect dish — the spices warm you up, the soft yet crisp florets are so deeply satisfying. The dish, while simple to make, while make your palette SING OUT LOUD!

Ingredients

  • 1 cauliflower broken or chopped into florets
  • 2 shallots thinly sliced
  • 4 Tablespoons ground cumin
  • 2 teaspoons red chili powder
  • 1 Tablespoon turmeric
  • 2 teaspoons sea salt
  • Fresh ground black pepper
  • Fresh cilantro to sprinkle on top

Heat oven to 400 degress.

In a small bowl, mix together cumin, turmeric, and chili powder. Add in ghee or olive oil to make a thin paste.

Add the cauliflower and shallots to two baking sheets, lining a reusable silpat mat. Try not to crowd too much so they will actually crisp. Slowly pour the spice mix over the cauliflower and toss very well so it all mixes up. Sprinkle with sea salt.

Slide into the oven and cook for 20 to 25 minutes. I usually rotate mine 15 minutes in. Plus it reminds me I have something delicious in the oven!

Taste for salt, sprinkle with plenty of fresh cilantro. Enjoy !

If there are any leftovers, they are perfect the next day or even later in the week. The cauliflower plays nicely with so many flavors. You could add it to a savory bowl of yogurt, or add some nuts on top, or even with store bought hummus. It’s just like that friend you can take to a party you know you don’t have to worry about.
